Whether it's 2.0 or 5.1 is decided by the source such as broadcast + Magic TV or Blu-ray player.

AV Amp can downmix 5.1 to 2.0 or any speaker configuration.
AV Amp can also upmix 2.0 to (virtual) 5.1 or any speaker configuration.

我試左81台係有5.1
但一轉其他台 轉返81台又變返2·0，又要set個 音軌3先得，很唔方便
同時好膠的5.1 睇一般電視 前中置低音有聲，後置冇聲，可能要有5.1戲先有後置聲
我平時dd2.0 轉thx7.1重好聲過佢5.1

It's the job of your TV to remember the audio track and subtitle track of each channel.   Magic TV also does this.

sony默認5.1聲道，其他臺就默認第一聲道。

I think:
In ordinary programmes, the extra channels should be silent.
5.1 broadcast from TVB may be useful for movies.
